We believe in the cultivation of natural ingredients to produce sustainable products. Our hand-crafted loaves and viennoiserie are made using flour(s) milled locally with traditional techniques learned in the south of France.

By combining flour and water, we create a culture that is naturally converted into a levain through "feedings" and fermentation, which is used in replacement of commercial yeast to naturally rise our breads.

Gathering herbs and fungi in the fruitful Evergreen forest initiated my passion for the cultivation of natural ingredients, which only grew stronger when I joined a farm to table hospitality group in America's heartland.
Having spent much time in culinary and pastry production, I was eager to learn the fabrication of bread. I paved my way to France, where I also had the opportunity to learn and enhance my skills in viennoiserie.
The beauty in baking is learning the science and foundation behind every creation. This is gained through years of reading, training, and practice. What is even more rewarding, is sharing that knowledge and passion with the community.
